easy dough for puff pastry lovers...





Flour                                               01       kg
Salt                                                   15      g
Sugar                                               20       g
Margarine                                       100    g
Water                                               530    ml
Hard margarine                            650    g
Total weight                                2315    g

Method

Mix flour, sugar, margarine and water and make a nice dough
2.       Rest the dough for 30 minutes
3.       Take the dough and roll out from center to downwards, at all for side, center to be thicker than the sides
4.       Place the hard margarine to the center, enclose the dough at all four sides and level it with a rolling pin from center to end.
5.       Proceed with laminating,give 2 single turns  at 15 minutes intervals, total four single turns to done spreading the fat dough paralleled

parsley potatoes..


01. Wash, peel and re wash the potatoes
02. Cut in to even size pieces .allowing 2-3 per portion.
03. Boil in fully light salted water. Approximately 20 minutes.
04. Drain well.
05. brush with melted butter and sprinkle chopped parsley for buttered potatoes

chili con carne'



When I asked which country originated chili con carne, he told me that he has no idea . He asked me to find that and tell him which country originated chili con carne.
Chili con carne was originated by Texas. He has mentioned central or South America.
I was looking at there when he was making chili con carne. Suddenly, I said “Bolognese sauce”. He looked at me and told me yes!
When I am asking something regarding cookery, he says “cookery is not easy to understand. It means every second we have to update and we have to be creative”.
He made chili con carne with Bolognese sauce. It is not the original recipe.
Actually, I saw every where that it had mentioned chili con carne doesn’t have original recipe. Usually chili con carne is always cooked with ground beef.
I have eaten chili con carne twice made with ground beef.
      When making chili con carne, the easiest method is make with Bolognese sauce.
Before making Bolognese sauce, what are the ingredients for Bolognese sauce?
·  1lb ground beef
·  Chopped garlic,  onion  , celery , carrot
·  Tomato puree or paste (what is the difference between tomato puree and paste? tomato puree is a thick liquid made by cooking and straining tomatoes. The difference between tomato pastetomato purée, and tomato sauce is consistency; tomato puree has a thicker consistency and a deeper flavor than sauce. The definitions of tomato purée vary from country to country)
·  Fat or oil
·  Half cup of warm water
How to make Bolognese sauce?
·         Heat a thick bottom pan with little amount of fat or oil
·         Add chopped garlic, onion , celery ,carrot expect ground beef
·         Chopped ingredients cook until tender
·         Add ground beef and stir until reduce the water in ground beef
·         Mix tomato paste in to cooking ground beef, and mix properly
Add warm water slowly and stir. (What is the reason for adding warm water? Current situation, it means cooking process can be changed by adding the normal temperature.)
When preserving Bolognese, what is the best method of preserving Bolognese ?
ü  The best method is frozen.
Now we are going to make a chili con carne
·  Frozen Bolognese sauce, reduce the frozen.
·  Heat a pan little amount of fat or oil.
·  Then add the Bolognese in to the pan.
·  Cook under low fire.
·  Cook until reduce the water.
·  Test the taste, thickness, and season.
·  Next step is, add kidney beans.
·  Cook few minutes and take off fire.                                                                                                                       
What are kidney beans? Kidney beans may be imported or cultivate in your country. When buying kidney beans, could be canned or fresh. Any way, when using kidney beans make sure that, if  there is canned beans we don’t need to cook the beans. It means canned beans already been cooked. If there  are fresh kidney beans, we  have to boil or steam beforeusing for chili con carne.
Then stir slowly....
Now it has finished nicely ...now you can enjoyed your chilli con carne.

BREAD CROUTONS

ingredients
 bread slices for your needs..[bread slice cut in to like dices]
butter, margarine or oil...
 {when making the croutons, if you want add some  herbs as well. as an example"OREGANO }

METHOD

 01.heat the pan with little amount of fat or oil,when fried these croutons we are using the shallow          fry method of professional cookery.
02. then you can add the brad slices into the pan..
03. these bread slices are toss until golden brown.
04. sprinkle and mix your herbs with croutons, before till reduce the heat of croutons.

CARROT SOUP

 Ingredients..

carrot                             600 g
butter or margarine         25 g
salt and pepper
croutons
(croutons made out of bread..https://foodmafi.blogspot.com/2019/08/bread-croutons.html)
slice bread for croutons      1
butter, margarine or oil for fried the croutons

METHOD

01. wash, peel and rewash the carrot. cut into pieces.
02. burly cover with water,add a salt to your taste.then simmer until tender.
03. drain well.pass through a sieve or mold.
04. return to the pan, re heat and mix in the fat,correct the seasoning and serve hot.
05. serve accompanied by 1/2 diced bread croutons shallow fried in butter.
